Do I invite my ex's boyfriends mother to my wedding? We have been friendly even though her son and I split a couple years ago.

If you wish to invite the mother of an old flame, then do so. Some relationships do not rely upon who knows whom in order to endure. It is lovely that you have stayed in touch and feel she would enjoy attending your wedding.
