Bridal shower (given by aunt in home state)

My daughter and fiancee are having already large (300) wedding in upstate NY, they both live in NYC. The groom is paying for most of the wedding events.

However, we have an aunt (will be attending wedding) and several friends (parents friends not invited to wedding) that want to hold a "shower" or "celebration" in hometown in Florida.
Is this appropriate if they will not be invited to the wedding (due to size, distance, and cost)?

Yes, that is appropriate and often done. Families are so spread out now, that multiple venues are acceptable. My only caution is letting the Aunt know that the others are not invited due to space limitations. You need not mention who is paying for what. That is not appropriate! Best wishes to you and your daughter!
